Ok, so got a hankering for cookies, decided to try and make them healthier. . was going to cook a batch and put them in the freezer to nibble on. . yes, I have will power :)

So, got what i needed, including Stevia & Blue Bonnet Light . .. thinking yes,I can do this, this should be great.

My cookies are a dismal failure. .they look more like the biscuits you get at red lobster, only instead of cheese, it's chocolate chips :P

THey're not horrid, with a big enough glass of milk LOL. . .added some canola oil in the 5th/6th batch and they look a bit better, but still very dry. . .

maybe it was someone's way of saying don't bother with cookies??? Any suggestions on how to make them better? Goign to attempt my birthday cake(cinnamon hot milk cake), with Splenda this week, and would hate to screw that up :P

I use applesauce instead of butter. I've heard stevia is no good for baking
  • here's a website that has a recipe for a low calorie chocolate chip oatmeal cookie that uses applesauce. i haven't tried it yet, but someone posted it awhile back and its been on my grocery list! there's also plenty of other delicious sounding desserts in the dessert section of the website you might want to try. its www.skinnytaste.com
