12 week challenge done, now what??

I just finished a 12 week challenge at my gym and dropped 25 pounds(the last 5-6 were water and came back which I expected). I am now close to being in the healthy BMI range, 179lbs and 5'10". My body fat is somewhere around 20%(scale says 20.5% I figure it's probably within 3-5%). My workouts include 60 minute classes in the mornings:
Monday - Interval
Tuesday - Boxing
Wednesday - Weights
Thursday - Kickboxing
Friday - Interval
Saturday - Kickboxing
Sunday - Rest day
My goal is to start building more muscle and lose some more of the fat around my mid section. My question is this, should I focus on losing another 10-15 lbs then start to work on muscle or can I work on muscle and still lose at the same time? I've heard that it's not easy to do both, but not sure which end that is at. Is it not easy to gain muscle and lose fat when you have less fat to lose or when you have a lot, say over 30% body fat?
I really enjoyed the 12 week challenge but didn't really enjoy the timeline(although it worked for me, I won the challenge). I don't really care too much how long this takes, I'm already committed to living healthy, so that part is done.
The other thing is, I'm really not concerned about weight, more body fat%. I'd like to be around 15-18%.

    focus on fat loss for the time being, I am torn between going back my old muscle routine which would require me to eat close to 4500 cals a day or cutting. I am sticking with cutting for now though as I want to see that flab gone and take it as far as I can. I am happy at my current weight but I am going further for sh*ts and giggles.
