I used egg beaters and sauteed the spinach and onions with a little bit of pam olive oil cooking spray. (:
I did however still use the butter in the sauce. Well worth it.0 -
I make these all the time delish!! I steam the spinach in those handy steamer bags instead of sauteeing. Sometimes I sub goat cheese for the feta which is also very yummy, or add chopped roasted red peppers or chipotles to the mix. Love different combinations.. all yummy!0

Thanks for posting this. My only issue was I bought 1.5 lbs of chicken breast and the recipe called for 3 lbs(K, I'm a guy and I skimmed thru the directions). But the leftover spinach stuffing made an awesome omelet.0
