I am a stay at home mom so I am not working. Basically during the day I am not running around like crazy, I am making dinner, laundry, taking care of baby etc.. I have mine set to sedentary even though I exercise 30-60 mins a day about 5-6 days a week. Is this correct or should I change it to something else?

Stick with sedentary, especially if you're entering the exercises separately. I'm active on week-days by walking to classes with a backpack in addition to exercise, but I set mine to sedentary because I enter in what exercise I do.
    It's better to under-estimate than over-estimate.

Ignore the exercise you do, you log that separately (in the exercise diary)

There are descriptions for each category. I'd consider looking after a baby and doing housework matches "Spend a good part of the day on your feet"

Your scale and/or inches lost will be a better indicator of the 'MFP' level of your activity. Example: If you have your MFP goal set to lose one pound a week, activity level sedentary, and you are recording exercise calories and eating them, then you should be meeting your goal. If you are not, (if you are losing more) then your daily activity is not really 'sedentary' but that is okay if you have a higher body fat percentage. You will lose at a rate of maybe 1.5 to 2 lbs a week and this is great. If you are too hungry, and not seeing any weight loss, you could increase the the activity to lightly active and see if this helps. I know that seems to be illogical, but it is true; you need to eat just enough to make sure your body has the energy it needs to burn fat but still be at a calorie deficit.

Absolutely - I've upped my activity level from sedentary to lightly active, and I may up it again. However it makes sense to start with the category that most closely matches your life. I'm guessing it's the loo being downstairs at work, and all the water I'm drinking that's boosting my normal burn ;)
