I always keep a container of fresh organic baby greens in my fridge.
I then toss in whatever I have handy...cucumber, tomato, left over chicken. I also always keep small cans of lemon pepper tuna in my pantry just in case...
Usually my lunches are a huge salad with some protein and it's always under 250 cal.

This is not really a recipe, but for lunch, I buy a bag of spinach, baby carrots, single portions of tuna fish (watch for lower calorie options), frozen veggies, and string cheese. I make a little salad and heat the veggies in the microwave. It helps if you have a place to keep these items at work or school. I buy for the week and keep them in the fridge at work. Don't have much trouble with people eating my veggies either. LOL :)

Simple soup: chicken broth (about 1.5 cups), 5 cups of spinach, pepper to taste, italian seasoning, cook for 20 minutes and put it in the blender...this was my lunch.

    Simple cream like soup:

    -2 potatoes
    -Onion to taste

Cook them first, put spices and herbs like you want it.

Then, 4 cups of broth (vegetable, chicken or beef), bring to a boil, put 4 cups of vegetables (what ever you feel like, different kinds or only one) then leave it to cook on medium heat for 20 minutes if it's softer vegetables, 40 minutes for harder vegetable. Once done, put in blender and tada! you have a cream of what ever vegetable without the cream.
It makes a few portion, so good for more than one lunch.

Also, slim bagel (100 calories one) with salmon and a little bit of greek yogurt with aneth and lemon zest.

Frozen vegetables of your choice, put in a container, add some cottage cheese to taste, herbs and spices and there you have a complete lunch.
