Low Fat Cornbread (only 96 calories)
This low fat cornbread is particularly wonderful when served warm. Have some ready when you next make a batch of chili.
Cook Time: 25 minutes
Total Time: 25 minutes
Ingredients:
1 cup yellow cornmeal
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg, lightly beaten
1 1/4 cups low fat buttermilk
2 tbsp canola oil
Preparation:
Preheat oven to 350 degrees. Spray an 8-inch square glass baking dish with nonstick cooking spray.
In a large bowl, combine cornmeal, flours, baking powder, baking soda and salt. In a separate bowl, whisk egg, buttermilk and oil. Add wet mix to dry and stir until just moist. Empty batter into glass dish and bake until lightly golden and until the top springs back slightly when pressed—about 25 minutes. Cool for a few minutes, then serve while still warm.
Makes 16 squares. 1 square is a serving.

This is amazing! Try using whole wheat flour and low fat sour cream to make it even lower in cals!

Ingredients
1/2 cup all-purpose flour
1/2 cup cornmeal
3 tablespoons sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 cup (8 ounces) sour cream
Directions
In a large bowl, combine the flour, cornmeal, sugar, baking soda and salt. In another bowl, beat egg and sour cream; stir into dry ingredients just until moistened.
Fill greased muffin cups two-thirds full. Bake at 400° for 15-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely. Yield: 8 muffins.
Nutrition Facts: 1 serving (1 each) equals 147 calories, 6 g fat (4 g saturated fat), 47 mg cholesterol, 249 mg sodium, 18 g carbohydrate, 1 g fiber, 3 g protein.0
