Wild Onion & Whitefish Chowder

Here is a great healthy chowder recipe I created. You can substitute any white meat in place of the fish and shrimp.

Cod Fillet, 8 oz
Slab Bacon - Butcher Shop Bacon - 2 pieces, chopped
Salt - 1/2 teaspoon
Potato - 3 Medium, chopped into 1/4" cubes
Mushrooms - 1/2 cup, sliced
Milk - 4 cup (I prefer skim
Peeled Shrimp - 5 oz
Wild Onions - 1 cup (Can use white or yellow onions instead)
Enriched flour - 1/4 cup

Saute a bit the chopped bacon until crisp. Add onions, mushrooms and chopped potatoes and stir. Sprinkle flour in, stirring as you go, Add the salt and stir well. Add in the cups of milk and stir, scraping the bottom. Cover and cook on low until potatoes are tender. Stir occasionally, again scraping the bottom. Any white fish or shrimp can be added as well as a handful of sweet corn kernels. Cook for an additional 5 minutes. Serve with a grating of cheese on top.Serves 6

    Also, I might add, a slice of sourdough bread goes great with it as well.
