Balancing my calories

So...funny story. A week ago I posted about how I never have enough calories and I'm hungry all the time.
Not so much anymore. I'm eating about 6 times a day (3 meals / 3 snacks). I'm not using enough calories. Usually I have between 200-300 left over. That leaves me at under 1000 calories a day. NOT GOOD! I'm not hungry, so I haven't been making myself eat more, but I've got to figure out how to add calories without throwing my carbs (unless they're in veggies) overboard. I can always use more protein, but to be honest...it just fills you up so much that it's hard to imagine adding more than I'm already eating. :-/
My diary is public for your viewing pleasure, and your ADVICE is welcome. Your judgement however is never welcomed by me, so if you don't have something helpful to say in a considerate and polite way, then don't bother to speak.
