WHOLE GRAIN NOODLE & LAUGHING COW CHEESE WEDGES! LITTLE SKIM MILK AND YOU ARE GOOD TO GO0

That sounds yummy!!0

take whatever pasta you have, I prefer whole-wheat pasta.... elbows if you want traditional, mix it up if not...
what cheese is in your fridge? I have cheddar, shred it.
Drain as usual once cooked thoroughly and add the cheese while pasta is still hot (ie don't rinse in cold water) it will mostly melt itself if the pasta is hot enough and its shredded fine enough. If not make sure your mixing it in an oven safe dish and toss it in the oven to melt the cheese.0 -
that sounds very yummy!0

Modifications could be to add butter and milk, but it's not necessary.0 -

I like the garlic and herb flavor! But I think any one would really work depending on what you like. Give a few a try and see what you like!!!0

When you make the home-made it makes me wonder where the sodium comes from in the boxed mac n cheese... in the cheese powder they give? all my pasta appears to be 0 sodium, and there's of course some in my cheese but my sodium count is much healthier eating the home-made variety...0

Whatever recipe you choose sub the pasta for whole grain, add diced green peppers, diced onion and diced (cooked) chicken. That way you're eating more chicken, veggies and whole grain in your portion than the unhealthy stuffs.0

Wow! Thanks everyone Keep those ideas coming!0

There is a greater recipe for homemade mac n cheese on skinnytaste.com. I made it the other night and even my husband really enjoyed it. I didnt add the spinach, because my husband doesnt care for it, but it was delicious without and even better the next day.
