BEST Salad Recipes ever!!

OK, So I am looking for your FAVORITE salad recipes ever!

If you happen to have the basic nutritional info (cals, carbs, protein) that would be cool, but MFP has this cool recipe maker section that I am absolutely loving so it's no biggie.

    Cbeth's Chicken Salad
    4-5 boneless skinless chicken breasts
    3 celery stalks finely chopped
    2 boiled eggs
    Lite Mayo made with olive oil
    garlic powder
    1/2 yellow onion chopped
    salt
    pepper
    3 tbsp relish
    boil chicken breast in water with salt and pepper for about 40min.
    Finely chop up onions, eggs and celery
    add in remaining ingredients (relish, salt, pepper, garlic salt to taste)
    (I do not measure my mayo, I just add enough so it is not dry :wink: )
    shred chicken and add to other ingredients and mix well
    Yum!

    I don't know the calorie count but
    Spinach
    blue cheese
    cranberries and balsamic vinegar with a little seasoning salt.

    I could eat that all day

    I do my own version of the Luau salad from Cheesecake factory

    romaine lettuce with mixed babygreens
    super thinly slice (w/food processor)
    cucumber and red bell pepper
    Blanched green beans
    green onions
    chopped macadamia nuts (a little goes a long way)
    diced mango (again a little goes a long way)
    shredded grilled chicken

    Toss in ginger wonton strips if you do white carbs (I set these aside for everyone else)
    Newmans light ginger sesame dressing is good with this or a light champagne vinaigrette. Any family gathering I go to I make a HUGE bowl of this so I know I will have satisfying food that I can eat that looks pretty as well. It feels more like a treat instead of deprivation.

    Another quick easy
    Spinach, apple, Feta, walnuts and shrimp with light balsamic vinagrette

    Sometimes the best salads come from just mixing everything you have all together.

    This is my fav salad

    Lettuce
    Baby Spinach
    Almonds
    Croutons
    Shredded tandoori chicken
    Part skim mozzarella cheese
    Cheddar mashed potatos
    Elbow Macaroni

    Use ranch as dressing
