spicy baked potatoes

serves 2-4
2 large baking potatoes
1 tsp peanut oil
1 small chopped onion
1-inch piece fresh ginger, grated
1 tsp ground cumin
1 tsp coriander
1/2 tsp ground tumeric
salt & pepper to taste
1 tbsp greek yogurt
preheat oven to 375. bake for 1 hour until soft, let cool. cut potatoes in half, scoop out insides and set aside, heat oil and fry onion to soften, then add spices and ginger and saute for about 2 minutes. Add the scooped out potato, salt and pepper to taste, keep on heat another 2 minutes. spoon mixture back into potato shells and top w/ a dollop of greek yogurt.
