Need an Idea for a Potluck

Hey, so I have to go to a dinner meeting tonight at the organizer's house right after I get off work. I was hoping to make mashed cauliflower, but wasn't feel well and went to sleep. So now, I have to figure out what to bring to this meeting that I can just go and pick up from the store without going home to cook. Does anyone have any low carb ideas, so that I will have something acceptable to eat as well?

All I can come up with is appetizers...ugh.

  • Well, Olives are no-carb. You can get a mix of gourmet olives (but those are kinda salty) and cheese, salad lettuce (butter-bibb) and some dressings also are no-carb or low carb. Cucumbers, Radishes, Broccoli all have low (2g per serving) carbs... Sounds like you might do a salad? Turkey and provolone or muenster cheese over the top could make it like a chef salad... good luck!
