Time restricted meal ideas...

Ok, so I don't like to cook. When I do, it's usually something along the lines of chicken cutlets battered in egg and breadcrumbs (not once, but twice). To go along with the lovely, healthy chicken cutlets? Yummy cheesy mashed potatos with butter (lots of it).
So... now that I've made myself a nice new craving, I would be interested in learning if anyone has any suggestions for on-the-go eating. I'm trying to build a menu and am in need of some ideas. For example, an easy lunch for me would be crackers with turkey (fast and simple). I run my own business and am raising 2 girls, 5 dogs, 2 cats, 2 rats and 1 ferret. Their feeding time comes before mine
So, any suggestions would be greatly appreciated!!!!!!!

I precook and freeze meals. Do you ever have a day off when you can do that?
I am also a huge fan of soup, (reduced sodium or homemade).
And how about taking chicken sitr frying it when your favorite veggies and putting it over rice. If you use the right herbs, you don't even need soy sauce.0 -
Crock Pots meals are probably going to be something to look into...
Toss in a pork roast, veggies, seasonings, and give it a few hours to relax on its own. Then, when you are ready to eat, its simple. Plus, when you do have the extra five minutes, you can pre-portion it out for quick meals later as well.0 -
Eggs are fast and awesome. Egg beaters (the ones that come in the carton), are super-low cal, and you can get just egg whites if you wish to be uber-healthy. But, there's nothing wrong with a real egg or two every now and then. Filling, tasty, and good for you. Just don't fry it in a pound of butter and eat it with greasy bacon and hash browns, okay? Hahaha. Try a slice of whole grain toast instead:)0

You guys are all wonderful! Thank you for the fantastic ideas! I actually begin my lifestyle change tomorrow so I am hitting the grocery store today with a list that includes each and every suggestion from all of you. I really appreciate your help!

get some quick on the go snacks, but try to stay away from pre packaged.
Try carrots and hummus. cheese sticks. I love Chobani and I put in a teaspoon of ground flaxseed, you can do cottage cheese with your crackers.
I save leftovers from the night before and toss on a salad. doesn't matter what it is chicken, steak, pork.
don't forget tuna it's convenient, low fat and portable.0 -
I'd say the biggest time saving thing would be to cook the same meal for yourself and your girls.
Soups are a nice quick easy meal, I just cut up whatever veggies and add some lentils or meat and chicken stock. Boil it up and blend, and you have a yummy low cal meal0 -
I just can't believe the support on this site. It's great! I truly appreciate each and every suggestion!
I went to the store yesterday and stocked up on water (ok, propel zero - I absolutely despise water), healthy foods and snacks. I'm going for a bike ride after I drop the girls off at school and then it's back to the desk for a bit. It's going to be difficult to fit all these good things into this bad schedule but I am bound and determined to gain my strength and body back!
