200 Cal. Veggie Stuffed Zucchini

Hi all! My family had this for dinner last night and it is just way too good to not share it with all of you! With this recipe you get a huge serving for only 208 calories! Make sure you use zucchini that are large enough to hollow and stuff.

What you need:
4 Large Zucchini
2-3 Tbsp. EVOO
Chopped:
Green Pepper
Red Pepper
Onion
Broccoli
Yellow Squash
(Any other vegetable you'd like)
Spices to your taste
Parmesean Cheese

1. Preheat oven to 350 degrees. In a big pot of water boil the zucchini WHOLE until fork tender (About 7-10 minutes) Then drain and cut off the stem and then in half length wise. Remove the pulp, leaving 1/4" in the zucchini. Place zucchini boats on a baking sheet that has been sprayed.

2. In a saute pan, heat up the olive oil and add in the chopped vegetables. Add in spices (I reccommend garlic, red pepper flakes, basil, oregano, salt & pepper) Saute until tender, add in zucchini pulp and continue cooking for a few minutes more.

3. Fill zucchini boats with vegetable mixture and top with paresean cheese. Place in a 350 degree oven for 20-25 minutes, checking to make sure they are not burning. Take out and enjoy!

Everyone gets an entire zucchini (2 halves) to themselves! Any ingredient can be added to this, some quinoa or cous cous for a pasta meal or even some chicken or other meat if you so desire! I hope you all will enjoy these as much as I did!

    anything with zucchini and summer yellow squash are my faves, could eat them every day.

    You might like this recipe I have for Zucchini Patties its super simple-

    ingredients-

    1 1/2 lbs zucchini
    1/2 tspn salt
    1/2 medium garlic clove finely chopped
    2 large eggs lightly beaten
    1/3 cup grated parmesan cheese
    2 tablesoons vegetable oil

    1. wash zucchini and coarsely shred with cheese grater.
    combine with salt and let sit for 15 mins in a bowl.
    after 15 mins, firmly squeeze to release most of the liquid
    drain on paper towels.

    2. add garlic, eggs and parmesan cheese. mix well.
    heat oil in non stick skillet over medium high heat.
    mound heaping tablespoons of the zucchini mixture
    into the skillet and flatten slightly. fill the skillet but dont
    over crowd, leave room for flipping.

    3. cook 6 to 8 minutes turning once until golden.

    makes 21 patties

    0 sugars
    1 carb
    1 fiber

    you can serve with sour cream on top, salsa or plain.
    I perfer romano cheese to parmesan and I also sometimes add parsley or a little finely diced onion and celery.
