Going through the message board i noticed a lot of people asking for some new chicken recipes, i found a recipe in a cookbook a while ago and changed it a little to make it healthier. Everyone i have cooked it for goes NUTS for it (no pun intended). its only about 150 cal. per serving and VERY easy to make. So I hope this helps. another great thing about this recipe is when you have guest you you can add an orange sauce or something to facy it up, but if you ask me its good just as it.
Almond Chicken
~*~ 4 boneless skinless chicken
~*~ 2 tbls all-purpose flour
~*~1/2 tsp salt
~*~ 1/2 tsp pepper
~*~2 egg whites, beaten
~*~ 1 small package sliced almonds
~*~ butter flav. cooking spray taste really good, or you can use olive oil spray.
Pound ckicken to 1/4 in. thickness. Coat chicken w/flour. Sprinkle w/s&p. Dip one side of each chicken into egg, press w/almonds. Spray cooking spray in skillet over mediem-high heat. Cook chicken almond side down, 3-5 min, until almonds are toasted: turn chicken over, reduce heat to medium-low. Cook until golden brown or all the way through.
Hope yall enjoy
