Southwestern Salad

My sister and I love to make a huge 'southwestern' salad. The left overs are great the next day. We put a ton of veggies in them, I usually eat it for dinner because with all the toppings it can get a little higher in cals. Of course you can easily make it less, by not using as many toppings, or taking some out!

Ingredients:
Spring Mix
Cut into small pieces:
Avocado
Tomatoes
Peppers
Corn on the cob
Black beans
Cilantro-chopped
grilled skinless chicken breast
Top with a drizzle of ranch, shredded cheddar cheese, and some crunched up tostitos chips! (could use the lite chips)

It's such a delicious and protein filled salad! It doesn't feel like health food :)

    I laid out some chicken for dinner tonight, with no specific plans. Now I know what I'm gonna do with it! Sounds great.
