Tilapia with Black Bean-Garlic Sauce - great for singles!
NOTE: This is NOT for those on a low-sodium diet.
For those of us who are single, this is a great one-person meal that is quick and easy. It takes me about 30 minutes, from the time I take everything out of the fridge, to putting it on the table. I eat this with brown rice.
1 serving
1 tbsp canola oil
1/2 medium Green Bell Pepper
1/2 small onion
1 slice or 1 tsp Fresh Ginger
1/4-1/2 tsp crushed red pepper
4 oz Tilapia Filet
1 tbsp Black Bean Garlic Sauce
dash Sesame Oil (optional)
1 scallion or green onion
Cut tilapia, green pepper, and onion into small pieces (maybe 1/2 to 1 inch big). Cut scallion into 1 inch pieces. Chop up ginger. Heat oil over medium heat in frying pan until hot. Stir fry onions, green pepper, ginger, and red pepper until fragrant, 3-5 minutes. Add fish and black bean garlic sauce, and sesame oil if using. Cook until fish is done, about 5 minutes. Add scallion pieces, and cook for 1-2 minutes. Serve over rice.
This has about 300 calories (not including the rice), according to MFP.
