i love quiche and i find them super easy to make from scratch but typically quite high calorie, does anyone have an alternative quiche recipe for a lower calorie option???

I dont make my own quiche (it seems too difficult!) but I imagine you need to replace some of the ingredients with low cal options so maybe try substituting whole eggs for egg whites....butter for low fat margerine.....using lots of veggies instead of meat....that kind of thing?

    Yes!!!!

Lightly grease a 8"square non-stick pan - I use fry light - drain and then crumble some feta cheese evenly over the dish and then spread some cooked veg over the cheese. and gently press. I like cooked mushrooms, peppers and tomatoes. Beat 3-4 eggs with some herbs and seasoning and pour over the cheese and veg mixture - tilt the dish to make sure eggs cover the whole cheese & veg mixture.

Bake in the oven until firm - e.g. gas no 4; Allow to cool and then cut into 4.

    Delish!
