My problem is trying to eat the recommended 2500 calories.
I realise that you need to eat the correct foods espcially before excerise.
Usually I excersie in the evening. The afternoon before I have been eating oat and honey crunch bars as a snack. Are these ok or too much fat? They do contain sunflower oil which I have heard is no good.

Those should be fine, in moderation.
If you are looking for other ideas on how to increase your calories, but not necessarily have to eat MORE, try a few simple swaps like doing 2% milk instead of 1%. Same for cottage cheese. Choose a slightly higher fat percentage and it will have a few more calories.0
