Quick grilled chicken over salad

I am living apart from my wife and daughter because of work :(
So I'm doing the singles meal lifestyle. I buy these Fresh Express Iceberg Garden Salad Mix bags and Tyson Boneless flash-frozen chicken breasts from BJ's warehouse (probably Costco has something similar), plus Newman's Vinegar and Olive Oil dressing.

I got a glass bowl with cover from the Target - a nice one, made in USA by Corning - which is easy to clean and microwave safe.

I put about 2-3 cups salad in, about 1 TB dressing plus a sprinkle of soy sauce to add to the flavor. That part takes about 2 mins. Maybe an extra minute if I dump in a couple of hearts of palm or other veggies to spruce it up.

Meanwhile, I MW a chicken breast on about 30% for 6 mins., then throw it on my Foreman Grill for about 6 mins. (with a little soy sauce).

Toss the chicken on top of the salad, clamp the cover on, and presto! a fast, very inexpensive 300 calorie meal that is filling and satisfying.
