Seven Seas Casserole/Tuna Casserole

Okay, so I grew up on this casserole and it just has a nostalgic taste to me. I made it yesterday with my own tweaks and, 1/4 of the recipe has only 341 calories! It's super easy, inexpensive, and you can keep the ingredients around for those days when you just don't have time!
1 medium to large onion, diced
1 can Campbell's Healthy Request cream of _______ soup (I used mushroom because that's what I had. The original recipe calls for celery. Use your favorite).
1 1/3 cup water
1/8 tsp pepper
1 1/3 cup Brown Minute rice
2 cups frozen mixed vegetables
1 5 oz can tuna
1 cup Sargento reduced fat cheddar cheese
Preheat oven to 375. In a sauce pan bring soup, water, onion, and pepper to a boil. Pour half of mixture into a casserole dish. Layer in order: Rice, frozen vegetables, tuna, the rest of the soup mixture, cheese. Bake for 20-25 minutes, remove from oven and cut cheese into casserole with a knife several times (don't stir), and bake for another 10 minutes.

What is it about tuna casserole that makes it so tasty? I grew up on a very similar casserole, but using a pound of broccoli for the veggie, no rice, and adding some bread crumbs on top. Thanks for the reminder that simple casseroles can be healthy.0
