Hey, everyone! I tried this recipe out for the first time today and it was amazing. I got it from Healthy Cooking. This is a really neat dish for coming into Spring. I loved it.
Prep: 25 minutes Cook: 10 minutes Yeild: 8 servings
3 bacon strips, chopped
3 tbsp rice vinegar
2 tbsp honey
5 tbsp olive oil
1 tsp dijon mustard
1/2 tsp pepper
1/4 tsp salt
1 pkg (6oz) fresh baby spinach
2 medium naval oranges, peeled and chopped
12 fresh strawberries, quartered
1 cup thinly sliced cucumber
1/2 cup thinly sliced red onion
1 medium carrot, shredded
1/2 cup chopped walnuts, toasted
In a small skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain.
In a small bowl, whisk the vinegar, honey, oil, mustard, pepper, and salt. In a large bowl, combine the spinach, oranges, strawberries, cucumber, onion, and carrot. Pour dressing over salad; toss to coat. Sprinkle with walnuts and bacon. Serve immediately.

You're welcome, everyone!
Note: These are the things I didn't use because I didn't have it on hand. If you look in my food diary, the nutrition count is off because I didn't put the exact brand I used, I just randomly put it what MFP had. I didn't have time to track exactly what brand I used, but my diary is an estimation of it. So these are the things I didn't use:
bacon strips (I used bacon bits)
rice vinegar (I used apple cidar vinegar)
olive oil (I used Pam spray)
Dijon mustard (I used regular mustard)
I did not use salt at all
I did not use walnuts either.0
