my boyfriend put in a request for cupcakes this week. i know that cupcakes will never be healthy, but does anyone have any 'lighter' cupcake recipes. id be crazy to think i could bake them and not sneak 1 :)

    look for ellie krieger recipes on food network. She has a carrot cake cupcake recipe that is great. I would also look for chocolate cupcake recipes that use shredded zuchinni, and you can always switch out some or all of the butter for canola oil, applesauce, or nonfat yogurt.

    hi, one way is to use a basic cake mix, but isntead of adding the eggs, oil and water you can add one can of any diet pop and it still makes a yummy cupcake, its just the icing that can kill you.
    Also check out Gina's skinny taste website, she has a low fat red valvet upcake on there and may be other.

    Sometimes I will cut the oil in half or substitute with appleasauce. This may not be the kind of cupcakes he is wanting but yesterday I took an angel food cake mix (the kind you just add water to) and 20 oz can of crushed pineapple. Mix just the cake mix and can of pineapple together (don't add the water). These were delicious. My whole family loved them. They are 60-70 calories each.

    if you like pumpkin you can mix a can with any kind of cake mix (i like spice) in place of the oil and eggs. also 2tbs water makes it a little more moist. i make it into cupcakes. add a little cool whip on top! super yummy but slightly addictive i will warn you.

  • The Hungry Girl cookbook has a great death by chocolate cupcake recipe. Only around 100 calories and no frosting. They are delicious and really take care of the chocolate cravings.
