Yummy Goats Cheese Salad

Here's what I made for lunch today and it was yummy!

Recipe:

½ firmly packed cup of spinach leaves
50g Chef sliced beetroot
2 tbsp Tesco Red Kidney Beans
2 tbsp Spar (Own Brand) Sweetcorn
1 tbsp chopped red onion
25g Tesco soft goats cheese
1 Tesco Reduced Fat Pale Bacon Rasher, grilled
1 tsp Shamrock's chopped walnuts, toasted

Dressing:
2 tbsp lemon juice
5ml extra virgin olive oil
½ tsp dijon mustard

Preparation:

1.Mix spinach leaves, sweetcorn, onion in a bowl.

2.Add 50g of beetroot to salad.

3.Cook 2 tbsp of red kidney beans in a small pan for 4-5 minutes. Drain and add to salad bowl.

4.Grill rasher for 10 minutes. Chop into little bits or shreds and add to salad.

5.Mix all dressing ingredients together in a small bowl. Drizzle over salad. Toss salad until all ingredients are mixed.

6.Season with mixed herbs and chilli flakes.

7.Put mixed salad onto plate.

8.Add 30g of goats cheese. Break into pieces.
