French toast with fresh plum - easy and yummy brunch.

I just had the most delicious brunch - cinnamon french toast with fresh plum and greek yoghurt.

1 slice of bread (I used Helga's Quinoa and Flaxseed)
1 egg
1/2 tsp cinnamon
1 tsp raw sugar
1 small fresh plum (berries would be good if plums aren't in season)
50g greek yoghurt

Beat the egg, cinnamon and a splash of water with a fork. Soak the bread in the egg for a few minutes.
Spray a small non stick pan with spray oil, cook the bread until it is golden brown on both sides
Slide the cooked toast onto a plate, top with a sprinkle of raw sugar, the sliced plum and yoghurt.

With my ingredients this came to 275 cals, it would be less if you used a lower cal bread (I like my breads grainy) and a lower fat yoghurt (my husband did the shopping so we have full fat greek yoghurt this week). The sugar is optional but I'm happy to add 20 cals when I can see where it is going - and it melts into the toast to make it syrupy and delicious!
