White Turkey Chili


Ingredients
1 tablespoon stick margarine or butter
1 1/2 cups chopped onion
1/2 cup chopped celery
1/2 cup chopped red bell pepper
1 tablespoon minced seeded jalapeño pepper
1 garlic clove, minced
3 cups chopped cooked turkey (about 15 ounces)
2 (19-ounce) cans cannellini beans or other white beans, drained and divided
2 (16-ounce) cans fat-free, less-sodium chicken broth
1 (4.5-ounce) can chopped green chiles
1 cup frozen whole-kernel corn
1 1/2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup 1% low-fat milk
1/2 cup chopped fresh cilantro


Preparation
Melt the margarine in a large Dutch oven over medium-high heat. Add onion and next 4 ingredients (onion through garlic), and sauté 5 minutes. Add turkey, 1 1/2 cups beans, broth, and next 6 ingredients (broth through black pepper), and bring to a boil. Cover, reduce heat, and simmer 15 minutes.
Mash remaining beans. Add mashed beans and milk to the turkey mixture. Simmer, uncovered, 20 minutes or until mixture is thick, stirring frequently. Stir in chopped cilantro.

Yield
11 servings (serving size: 1 cup)

    I just made a simpler version of this last night, given to me by a friend. It was pretty good and very easy!

    I used curry instead of cumin, it worked very well (either would be great, I'm sure).


    My friend's method:


    What you need:


    A package of ground turkey

    1 medium yellow onion

    Minced garlic (or fresh garlic, but that adds time and doesn’t change the taste)

    2 cans of beans (great northern white beans, but any white bean will do)

    2 cans of chicken broth (I use the low sodium kind)

    1 can of chopped green chiles (usually in the “Mexican” aisle of the supermarket)

    Cumin

    Olive oil

    Pepper sauce (if you want to spice it up, not necessary though – it’s good without it)



    How to cook it:



    1. Drain and rinse the beans in a strainer
    2. Dice the onions
    3. Brown the turkey in a sauté pan
    4. In a large pot heat the olive oil and then add the garlic, sauté until golden
    5. Add the chopped onion and chiles to the pot and sauté for a minute or so until the onions get soft
    6. Add 2 tablespoons of cumin and stir it in with the onions/chiles/garlic
    7. Add the beans, turkey and chicken broth (in that order so you don’t splash the chicken broth all over)
    8. Bring to a boil, reduce heat to medium and let it simmer for 5 to 10 minutes
    9. Eat it. Or season it with pepper sauce if you want it to be hotter. Then eat it.
