Miss Mashed Potatoes? Cauliflower to the Rescue!

Do yourself an enormous favor and buy a jar of "Better than Bouillon" Ham Base. (see link below)

Throw a tablespoon of that in the bottom of a saucepan. Fill the pan w/ water... maybe a couple inches deep? Boil until the Ham base paste dissolves.

Add a whole head of cauliflower - no need to cut it up. Throw a lid on it and steam the cauliflower until it's fork tender.

If you have an immersion blender - use it AFTER you drain the water from the pan. If not, throw the cauliflower into a food processor or a blender and puree until smooth and creamy. Add cayenne pepper and enjoy with grilled meat and roasted veggies.

It's SOOOOOOOO good. The ham base gives it a smokey love that lingers on your tongue. You can eat the entire thing and it's less than 150 calories!

    Tried something very similar to this a while back and it was surprisingly good.
    Just used a potato masher mind you, but still a stupendous substitute!

    i make cauliflower RICE, but haven't tried the cauliflower mashed potatoes yet! :o) deff will have to.

    to make the rice you put raw cauliflower in a processor so it's about the size of grains of rice & you steam it (do NOT add water) & then season as you please & it is an amazingly yummy rice substitute & less than 50 calories for half a head!

    Celery root mashed potatoes are suprisingly good too!
