Need a Recipe for Taco Soup, asap :)

I need a healthy taco soup recipe? Want to make it for dinner tomorrow so I need to go to the store tonight. Also, do you serve anything else with it? Thanks in advance!

Ok so here is how I make mine and its amazing! (I got it years ago from my WW leader)
-1 lb lean hamburger or turkey
-3 cans S&W chili beans, not drained (the pinto beans in sauce I beleive)
-1 pack taco seasoning
-1 pack ranch dressing mix
-1 onion
-1 can ortega green chilis (the 7 oz can)
-1 can chopped tomatoes, not drained
-corn optional (I dont add that, but lots of people do)
-2 cups water
brown meat, drain and set aside, sweat onion, then add to meat and add both season packets, cook for a min. Then I add the rest and simmer for about 20 mins and BAM! Great Taco Soup!! It makes a whole bunch, great after being frozen as well. I usually eat it alone, but sometimes will crumble a couple tortilla chips for a crunch, and I usually add a dollop pf FF sour cream! Enjoy!
Made this way for WW it was 2 points for a cup!!0 -
Here is my recipe, not sure about nutritional information.
1 lb ground meat
1 can niblet corn
1 can tomato soup
1 can pinto beans
1 pk taco seasoning.
I serve mine with Doritos, cheese and sour cream. I guess that isn't to healthy.
The recipe above serves 2 - 4 people. You can always double or triple this to make for a bunch of people. If you triple it, it fills up a oval crockpot.0 -
1/2 lb lean ground chicken or 2 chicken breast cubed
4 cups low fat/low sodium chicken stock
1 jar of salsa (choose your spice level)
1 cup to black beans
1/2 cup corn
1 small onion chopped
1 carrot chopped
2 cloves garlic chopped
Salt/pepper to taste
Brown chicken, add garlic, onion and carrots. Saute 3 minutes...add stock and all other ingredience. Simmer for about 1 hour to untill carrots are soft. Enjoy!

Here's mine, takes about 45 minutes to make:
1 cup diced onion
2 cloves diced garlic
1 can black beans (drained)
1 can diced tomatos
1 cup frozen corn
2 cups chicken stock
2 tsp chilli powder
1 tsp cumin
1/2 tsp cyanne
1 tsp paprika
simmer the onions in olive oil on med-low heat until translucent
add garlic and simmer for 5 more minutes
add spices and allow to simmer for 5 minutes
add black beans, allow to simmer covered for 5 minutes
add tomatoes and simmer
add chicken stock and allow to simmer for about 10 minutes
Add frozen corn and let simmer
The recipe is simple and the point of adding each ingredient in the manner is to build the flavors as they change as they cook and caramelize. This is especially true for the onions and garlic the spices are allowed to permeate the veggies and bring the flavors together.0 -

Here is my recipe:
Chicken Taco Soup
3-4 Frozen Chicken Breasts
1 envelope ranch dressing mix
1 envelope taco seasoning
1 medium onion, diced
1/2 jar salsa (or 1 can diced tomatoes)
1 can cannellini beans
1 can kidney beans
1 can vegetarian baked beans
1 can kernel corn
1 can black beans
Directions:
Put everything in crockpot in order listed. Do not rinse or drain beans. Do not stir. Cook on low for 6-8 hours. Take chicken out and shred with two forks. Put chicken back in, stir, and eat. Freezes well.
Serving Size: 1 cup
Points: 3 per serving

I love this one but with some changes. I use black beans (plain) and pinto (plain) -this will cut sodium- I go with the corn and use 1 can crushed toms and one can rotel (toms with green chillies).
Brown meat and onion, add all cans with all juice included on draining, add water to thickness you desire, mix in taco seasoning and ranch dressing. So yummy

1 package ground turkey.
1 package taco mix.
2 cans drained black beans.
1 can tomatoes.
1 container of fresh salsa.
16oz chicken or veggie broth.
1 can tomatoes.
1 chopped onion.
2 garlic cloves.
1 green pepper.
1 red pepper.
cook turkey and add taco seasoning. make as directions call for. in a pot have everything else cooking together, mix in meat, let it cook together for 10 or 15 minutes.
i sometimes i add sour cream and some cheese.0
