food ideas for a Wake

My boyfriends dad just died and after his funeral their will be a socializing time... we are discussing brining food and my bf told me he wanted me to bring my families chili/cheese dip and some chips. I'm ok with meeting his request to make him happy, but I highly doubt a ton of chili and a cube of velvetta cheese is low cal, so I need other appetizer ideas to bring that is not too expensive. There will be stuffed mushrooms and a veggie tray and a jello mold thing and that's all I know. I am a picky eater, don't want to make anything with pickles, mustard, squash, etc. I hate deviled eggs, potato salad..

Greek salad sounds good but a lot of noodles combined with a lot of salad dressing combines with cheese and high cal olives just doesn't seem too low cal... and I want a comfort type food given the occasion but still healthy (just without ppl knowing, if u know what I mean)

    Ingredients

    3 medium tomatoes, seeded and chopped
    1 can (15 ounces) black beans, rinsed and drained
    3/4 cup fresh or frozen corn
    1/2 cup finely chopped red onion
    1/2 cup chopped roasted red pepper
    1 jalapeno pepper, finely chopped*
    2 tablespoons minced fresh cilantro or parsley

    1/4 cup lime juice
    1 garlic clove, minced
    1 teaspoon dried oregano
    1 teaspoon ground cumin
    1/2 teaspoon salt
    1/2 teaspoon ground coriander
    Baked tortilla chips

    How to make it

    In a large bowl, combine the first 13 ingredients. Cover and refrigerate for at least 2 hours before serving. Serve with tortilla chips. Yield: 4 cups.

    Crystal, I can't copy/paste and that isn't a link so can't click on it...I'm on a phone, just need some ideas so I can look up individual recipes if I like the idea...takes a lot of time to search entire websites for ideas when ur on a phone. Thank u for trying

    have you thought about doing some turkey wrapped in wheat tortilla's... you could even get some low fat cream cheese and spread on it. I have been searching EVERYWherE for a low cal/fat cheese ball recipe!

SKEWERS OF FRESH MOZZERELLA/BASIL/CHERRY TOMATOES IN FAT FREE ITALIAN DRESSING????PRETZELS WITH DIFFERENT KINDS OF MUSTARDS???? BABA GHANOUJ/ASPARAGUS SPEARS??? GRILLED CHICKEN SKEWERS????
    I ALWAYS MAKE SAUCE AND MEATBALLS TO SEND FOR FUNERALS... ITS GOOD BECAUSE THE FAMILY CAN FREEZE/ USE LATER...... I KNOW THAT DEALING WITH FUNERALS IN MY FAMILY...     Southwest Turkey Meatballs with Creamy Cilantro Dipping Sauce

    1-1/4 lbs 99% lean ground turkey
    1 jalapeño, seeds removed (leave some in for spicier meatballs)
    2 cloves garlic
    1/4 cup chopped fresh cilantro
    3 scallions
    1/4 cup seasoned bread crumbs
    1 egg
    1 tsp cumin
    pinch oregano
    salt and fresh pepper
    cooking spray
    Creamy Cilantro Tomatillo Dipping Sauce (1 point+ more per 1/4 cup)

    Lightly spray baking pan with oil. Preheat oven to 400°.

    Place jalapeño, garlic, cilantro, and scallions into a small food processor or chopper and pulse a few times until finely minced.

    In a large bowl combine turkey, chopped herbs, bread crumbs, egg, cumin, salt and pepper. Using your hands, mix well and measure 1/4 cup meat, then divide in two so you end up with each meatball 1/8 cup in size. Roll and place on a baking pan.
    Bake meatballs at 400° 15 minutes.

    Makes 24 meatballs.


    Creamy Cilantro Tomatillo Dressing

    1 tomatillo, husks removed, chopped
    1 clove garlic
    1 scallion
    juice of 1/2 lime
    1/2 tsp dried parsley flakes
    1/8 tsp cumin
    1/4 tsp fresh ground pepper
    1/4 tsp salt

    Combine all ingredients in a blender.

    Makes 1-3/4 cup.

    Ingredients:
    2 cups chopped fresh pineapple
    1 cup chopped red and/or green bell
    pepper
    1/2 cup sweet onion slivers

    1/4 cup lemon juice
    3 tablespoons chopped cilantro
    1 fresh jalapeno pepper, seeded and
    finely chopped (or more to taste)
    Directions:
    1. Blend pineapple, bell pepper, onion, lemon juice, cilantro and jalapeno pepper in medium bowl.
    2. Refrigerate, covered for 4 to 24 hours, if desired, stirring occasionally.
    3. Serve with grilled chicken or seafood or as an appetizer with chips.

    STRAWBERRIES WITH MINT YOGURT DIP
    YIELD: Makes 2 cups dip

    Ingredients

    1 quart vanilla yogurt
    1 tablespoon minced fresh mint
    1/4 teaspoon grated lemon rind
    2 to 3 tablespoons honey
    Garnish: fresh mint sprig
    Fresh whole strawberries

    Preparation

    Line a fine wire-mesh strainer with a coffee filter, and place over a bowl.
    Spoon yogurt into filter. Cover with plastic wrap, and chill at least 24 hours. Yogurt may be chilled up to 72 hours. It gets thicker the longer it chills.
    Discard liquid in bowl, and whisk together thickened yogurt, mint, lemon rind, and honey until blended. Garnish, if desired. Serve with strawberries.

    Spinach dip sounds good...so does my salmon dip I foorgot about...can of pink salmon with a thing of cream cheese, tablespoon or two of parsley, couple dashes of worsheshire sauce...

    CAPRESE APPETIZERS

    YIELD: Makes 8 appetizer servings
    PREP TIME:20 MINUTES

    Ingredients

    1 pt. grape tomatoes, halved
    10 to 14 fresh small mozzarella cheese balls, cut into thirds*
    32 (4-inch) wooden skewers**
    1/4 cup extra virgin olive oil
    2 tablespoons balsamic vinegar
    1/4 teaspoon kosher salt
    1/4 teaspoon pepper
    6 thinly sliced fresh basil leaves
    Kosher salt and pepper to taste

    Preparation

    1. Thread 1 tomato half, 1 piece of cheese, and another tomato half onto each skewer. Place skewers in a shallow serving dish.
    2. Whisk together oil and next 3 ingredients. Drizzle oil mixture over skewers; sprinkle with basil and salt and pepper to taste.
    *1 (8-oz.) package fresh mozzarella, cut into 1/2-inch cubes, may be substituted.
    **Wooden picks may be substituted.

    Veggie tray is already there... thought about fruit tray with sug free chocolate pudding but fruit can get spendy, I hardly buy it for myself.

    I have not tried this yet, but here's a Cheese Ball recipe from my WW cookbook:

    3/4 cup shredded low-fat sharp cheddar cheese
    3/4 cup no-salt-added, reduced-fat (2%) cottage cheese
    1 T Dijon mustard
    1/8 tsp cayenne
    1 (8 oz) package fat-free cream cheese, cut into quarters, at room temperature
    1 (.9-oz) pkg dry vegetable soup/recipe mix
    1/2 cup chopped fresh parsley

    In food processor, pulse the cheddar cheese, cottage cheese, mustard and cayenne until very smooth, about 2 minutes. Add the cream cheese and soup mix; process until smooth, scraping down the sides of the bowl as needed. Scrape with spatula onto a large sheet of plastic wrap.

    Wrap the plastic around the cheese mixture and shape it into a 4-inch ball or 7-inch long log with your hands. Refrigerate until firm, at least 3 hours or overnight.

    Just before serving, sprinkle about half the parsley in a circle onto a sheet of plastic wrap. Unwrap the cheese ball/log and place on the parsely. Sprinkle remaining parsley on top and press to help the leaves adhere. Carefully roll any uncoated areas in the loose parsley and smooth the shape, if needed. Place on a serving plate and surround with cut-up veggies of your choice.

    Makes 16 servings
    Per serving (2 T): 42 cals, 1 g fat, 219 mg sod, 2 g carb, 0 g fiber, 5 g protein.
