Ground Turkey & Potato

I am hoping I can get some advice on how to cook my potatoes tonight. Today is my "Friday" (I'm off every other Friday) and I thought the kids would like to have some burritos tonight. I am out of beans (Boo!) and since I don't want to stop at the store on my way home from work, I was wondering if anyone had any suggestions on how to cook my potatoes. Normally I would dice my potatoes and fry them in canola oil (I cook my ground turkey in boiling water until it’s done, btw) and once my potatoes are done I drain the oil off and add them to my cooked ground turkey, add some jalapeños, tomatoes, and whatever else sounds yummy.

I’m just wondering if there’s an alternative way to cook the potatoes without frying them in oil.

Perhaps roasting them in the oven??? Ideas? Suggestions???

    Dice the potatoes, season to your liking, and add some chopped onions if u like. Put this in a roasting pan lightly sprayed with olive oil and bake for 45 minutes. Yummy!

    I love fried potatoes but don't dare eat them. So I dice my potatoes and I dry fry them in a nonstick skillet with using PAM as my oil. It gives me the fry fix that I need without the fat and guilt.
