Goulash

I made a yummy lo- cal goulash tonite for dinner. Instead of serving it over mashed potatoes or noodles, I served it over steamed cauliflower. I left it whole and a little crunchy for texture. My kids aren't thrilled, but I like it :love:

    That sounds good. Have you ever tried roasting the cauliflower? It roasts beautifully and is so yummy and nutty. Toss in a very little bit of olive oil, some chopped garlic, fresh thyme and crushed red peppers - along with a little pepper and some kosher salt and roast at 425F for about 15 minutes (or more or less - depending on how you like it). Yum!
