Chocolate-Cherry Cobbler

3 tbsp packed brown sugar
2 tbsp cornstarch
1 can (16 oz) pitted red tart cherriespacked in water, undrained
1/4 tsp almond extract
2 tbsp reduced-fat margarine
6 drops red food color, optional
1/2 cup all-purpose flour
1 tbsp +1 tsp cocoa
3/4 tsp baking powder
1/8 tsp salt
1/3 skim milk
1 tsp vanilla
Heat oven to 375. Mix 2 tbsp of brownsugar and the cornstarch in saucepan; stir in cherries. Cook over medium heat stiring occasionaly, until slightly thickened, 4-5 minutes. Stir in almond extract and food color. Pour into ungreased1-quart cassarole.
Cut margarine into flour, cocoa, remaining 1 tbsp brown sugar, the baking powderand salt until mixture resembles crumbs. stir in milk and vanilla. drop dough by 6 spoonfuls onto hot cherry mixture.
Bake until in no longer doughy, 20-25 minutes. serve warm
