what brand knives do you own? are you satisfied with them (rate them on a scale of 1-10)? what do you wish you owned?

i have 6 cutco 'kitchen' (aka steak) knives that i just love. i'd rate them a perfect 10! the only downside is the price which is close to $180. the whole set of cutco runs around $1500-$1800.
the rest are chicago cutlery. i HATE them! they are all woethless, except for the butcher knife. we actually threw the steak knives away. i'd rate them a 3.0 -

The ones pampered chef sells are reasonably priced, suprisingly sharp, and hold an edge well. I have used one to completely process a deer without having to sharpen it.0

Cutco knives are awesome. I have nearly the whole set as I attempted to sell them 7 years ago. I once cut my steel exhaust pipe with one and it didn't dull it at all.0

I also use the Pampered chef ones, A little pricey (approx. $50-100 per knife) but they work well. I use a cheap set I got from Target for any serious butcher jobs that could potentially damage a blade.0 -
All my kitchen knives are Honda. Accord front coil springs to be specific.
My pocket knives are Kershaw; easy to sharpen, and lifetime unlimited no-questions-asked warranty.0 -
Henckels "Professional S" series. They cost a lot of money but it is a one time investment if you take care of them and use them daily (I am an avid home cook).0

I have one of the mid-range Henckels sets ($150ish).... had it for about 7 years now. Some of the knives are starting to dull (no dishwasher ever). But I would buy Henckels again, very sturdy and well made!0

Wusthoff forged blades with the traditional three rivet handle and full tang. Perfect 10's up and down. I managed a specialty knife shop for two years and these are the only knives I buy. Whenever we buy one or a pair for friends or family as gifts they instantly become those people's favorite knives.
I grew up with Wusthoff knives in my mom's kitchen, and she still has those same knives, and they're as perfect as ever. She also has a few very old Henckels from before they changed their forging ratios that have held up as well as the Wusthoffs. But the couple of modern Henckels she picked up aren't faring as well.
Global knives are okay but need more care with the steel and more frequent sharpening, plus the handles get really slippery if wet. And she has a few specialty Japanese knives that are really nice but I don't have a need for in my kitchen.0
