Garlic Pesto Tuna Salad Sandwiches

I found this recipe on allrecipes.com and REALLY liked it. It was something different to do with tuna. And it only took me about 10 minutes to make, so it's great for those evenings you don't have a lot of time to put something huge together.


INGREDIENTS
2 (6 ounce) cans tuna in water, drained
2 tablespoons mayonnaise
1 tablespoon prepared mustard
2 tablespoons basil pesto
2 cloves garlic, minced
8 slices rye bread
8 leaves lettuce
1 large ripe tomato, sliced


DIRECTIONS
In a medium bowl, mix together tuna, mayonnaise, mustard, pesto, and garlic.
Make four sandwiches by layering tuna, lettuce, and tomato slices between slices of bread. Serve.

Servings Per Recipe: 4

Amount Per Serving

Calories: 368
Total Fat: 12.1g
Cholesterol: 32mg
Sodium: 612mg
Total Carbs: 34.8g
Dietary Fiber: 4.8g
Protein: 29.1g

The only thing I might do differently is add a slice of mozzerella cheese on top. Enjoy!!

    This sounds great! I have some pesto in the 'fridge that I had been using to make tomato-mozzarella sandwiches and was at a loss at what else other than pasta that I could do with it. This sounds yummy!
