Advice on calorie / loss per week goal

So, back when I started, I set my goal at losing 1lb per week which gave me a calorie goal of 1200 daily. At first, I was under that a lot and through a lot of reading starting eating my goal every day. This helped break a plateau. Recently I've been super hungry a lot as I've started exercising closer to 5-6 days a week so I changed my goal to losing .5 lbs a week and that put me at a daily calorie goal of 1360. Well...after 2 days of that, the scale had me up 1.5 lbs today.
I'm drinking my water and have my sodium goal at 1500 so what is happening? Do I need an adjustment period or was the 1200 working and I should have stuck with that? A lot of other sites has my fat loss calorie goal higher so I thought the 1360 would be perfect.
Anyone want to weigh in? haha no pun intended
