Easy Pineapple Coconut Cream Pie!

This is one of my favorite recipes, and I am planning to do it for Easter. There are also lots of substitutions you can make if necessary.

2 Graham cracker pie crusts
16 oz crushed pineapple (you can use canned or fresh) WITH JUICE
1 package (3 or 4 oz) sugar free instant vanilla pudding
6 oz plain greek yogurt (you can also use vanilla or pineapple)
1 12oz container light Cool Whip
*1 cup shredded coconut

*Unsweetened shredded coconut is hard to find at the store. You can use fresh, and it will save you calories, but it is also more work.


* If you are using fresh coconut, you will have to break it, remove the meat and shred it before hand. Same with the pineapple.

1. Combine Cool Whip, vanilla pudding and yogurt in a large bowl. Fold in pineapple and 3/4 cup coconut.
2. Pour filling into 2 pie shells. Add the remaining coconut on top. You may also garnish the top of the pie with more pineapple slices or fresh berries
3. Freeze for at least 3 hours.
4. Take out of freezer 30 minutes prior to serving and enjoy!

One pie makes 8 servings, and two makes 16...

    Unsweetened coconut can be found in the frozen food section. The brand I buy is Bird's Eye. It is just like fresh.

    Also, I would not use fresh pineapple as the enzymes in it might keep the pudding from setting.

    I am doing my test run today... I always do in case something needs to be changed... And my husband and I will each have 1 piece and then we give the rest to neighbors.

    Anyhow, here are my notes.
    Use plain yogurt... the pineapple and pudding give it enough sweetness, flavored yogurt would be overkill.

    I also used pureed fresh pineapple.

    I didn't use all the whip cream and reduced the sweetened coconut to 2/3 cup.

    This makes enough for ONE pie shell.

    OK...I have a dumb question. Do you prepare the pudding with the milk and then combine it with the Cool Whip, etc. or do you just mix in the dry pudding? I had everything out on the counter ready to go and then realized I wasn't sure which way to make it.

    Hey bridgeville. Since we didn't get a response, I went ahead and made the pies. Do not make the pudding, just add the powder. Doing it that way, there was just enough to fill two pie shells...if you make the pudding, there would be enough to fill 4 or 5 pie shells...LOL. I haven't eaten it yet, but am looking forward to it for dessert after lunch today. Will let you know how they turned out. :smile:

    Sorry I failed to check this after making it and putting on my last post.
    No, don't prepare the pudding with milk, just mix it with other ingredients listed.
    Also the fresh pineapple does not work as well, whoever said that it will keep the pudding from setting was right. Canned pineapple next time.
