Chicken and Spinach

Ok, I have a chicken to roast and I have 2 pounds of fresh spinach........ how do I make dinner out of that??????? I need something different with the spinach, If I just pile it on the boys plates they wont eat it!~!~!

    do a search for chicken and spinach several will come up that are under 400 cals. :-)

    Do you like Indian food? You can make the roast chicken and then some spiced spinach with chickpeas.

    I don't know hos others make it, but in Hungary we make like this :)

    Spinach sauce

    Ingredients: 15-20 ounces spinach, 4-5 cloves
    garlic, oil, salt, red pepper, 2 tablespoons of flour, 1.5 cups
    milk.

    Preparation: Wash the spinach, and we'll put in a pan
    cook. If boiled and filtered very finely chopped. Pour oil in a pan
    and mashed garlic is slightly browned. Put in a broth
    teaspoon red pepper and add the spinach well. Pour approx. 2 dl
    back into water and cook. The mixed flour and milk until smooth thickening
    Prepare and pour. Season with salt and cook for ten minutes yet.

    I totally understand.. my son won't touch any vegetables still, very frustrating!

    I'm assuming from your post it's a whole chicken? If that's the case, I would roast it with some lemon, herbs and olive oil. Then for the spinach.. hmm, that's a tough one. I'm assuming they won't eat it sauteed with olive oil and garlic? Maybe you can steam it and then for them make a cheesy sauce?

    A standby in my house is chicken breasts stuffed with steamed spinach and laughing cow. And no.. my son won't touch that either, lol!

    I saute fresh spinach with fresh sliced garlic in a little olive oil ( 1 or 2 tbsp) until wilted. It is delicious and my kids always loved it. Just saute your garlic for a minute first, then add your spincah and toss in a little salt and cook just a few minutes:smile:

    Im going to do the spinach sauted and if they wont eat it.... MORE FOR ME!~!~!~! ill have it for lunch too if I have too!~!
