Chunky Pecan Bars

I got the recipe for these out of the Taste of home comfort food diet cookbook. I made them for church potluck, they are super tasty, and hard to stay out of, not to mention very easy!

Chunky Pecan Bars

1 -1/2 cups all purpose flour
1/2 cup packed brown sugar
1/2 cup butter melted

In a small bowl, combine the flour and brown sugar; add the butter and mix well. Press into a greased (very well) 9x13 in pan. Bake at 350 degrees for 10-15 min. or until golden brown.

Filling:
3 eggs
3/4 cup sugar
3/4 cup dark corn syrup
2 Tablesppons butter, melted
1 teaspoon vanilla extract
1- 3/4 cup semisweet chocolate chunks
1-1/2 cups coarsely chopped pecans

In a large bowl, whisk the eggs, sugar, corn syrup, butter and vanilla until blended. Stir in the chocolate chunks and pecans. Pour over crust. Bake for 20-25 min. or until set Cool completely on a wire rack. Cut into bars. Stroe in an airtight container in the refrigerator.

Yield: about 6 dozen
