Creamy Balsamic Salad Dressing
I was searching around the kitchen, looking for an alternative to an oil-based salad dressing. On a whim, I combined 1 T balsamic vinegar with 1 T plain Greek yogurt. It's not bad! I added in a few grinds of Italian herbs and a pinch each of s&p. The result was only 19 calories and 3 carbs and was enough for a largish side salad. When making my own vinaigrette, I do prefer it more acidic. So taste first and add more yogurt if you need to. Don't get put off by how it looks when you're mixing it! The acid in the vinegar breaks the yogurt up into curd-like pieces, but keep stirring. The end result will look like melted milk chocolate.
