Prep time: 10 minutes start to finish: 30 minutes makes: 2 servings

1/3 cup bisquick heart smart mix
1 tablespoon water
1 egg white or 2 tablespoons fat-free egg product
1/4 cup plus 2 tablespoons shredded reduced-fat cheddar cheese
1/4 lb lean (at least 80 %) ground beef
1/2 cup canned condensed cream of mushroom soup
3/4 cup frozen mixed vegetables

heat oven to 400. spray 8 inch loaf pan with cooking spray. in small bowl stir together bisquick mix, water, egg white and 1/4 cup of the cheese; spread in pan.

in skillet, cook beef until brown and cooked through. drain. stir in soup and vegetables; heat until hot. spoon beef mixture over batter in pan. sprinkle with remaining 2 tablespoons cheese.

bake about 20 minutes or until edges are light golden brown.
