Any Easter Dessert Recipes

I love to bake and would enjoy making something for Easter that I wouldn't feel guilty about eating. I would love any low-calorie yummy dessert recipes!

If you don't mind artificial sweeteners you could try making diet soda cake. Its absolutely delish!

Low Fat Strawberry Swirl Cheesecake

Servings: 9 • Size: 1 slice • Old Points: 3 pts • Points+: 4 pts
Calories: 132.9 • Fat: 5.6 g • Carb: 15.1 g • Fiber: 0.1 g • Protein: 5.8 g
non stick cooking spray
1/2 cup crushed graham cracker crumbs
1 tbsp light butter, softened
8 oz package reduced fat cream cheese, softened
1/4 cup sugar
6 oz fat-free vanilla Greek yogurt (I used Chobani)
2 large egg whites
2 tbsp lemon juice
1/2 tsp vanilla extract
1 tbsp all purpose flour
1/4 cup strawberry jam (I used sugar free)
Heat oven to 350°. Coat an 8-inch square baking pan with non-stick spray.
Mix together graham cracker crumbs and butter with a fork until evenly moistened. Press evenly into bottom of prepared pan.
Gently beat cream cheese, sugar and vanilla until smooth using an electric mixer. Gradually beat in fat free yogurt, egg whites, lemon juice, and flour. Do not over beat. Pour over graham cracker crust.
Stir jam until smooth. Drop by small spoonfuls over surface of filling. Using a knife, swirl jam gently through filling to create marble effect.
Bake 25 to 30 minutes or until center is almost set. Cool to room temperature. Chill a few hours in the refrigerator.

Low Fat Blueberry Yogurt Muffins
These muffins are soooo good! I used only half of the sugar and used sweetened applesauce because that's what I had on hand. I skipped the step of putting the extra yogurt inbetween layers of batter and just added the total yogurt amount to the batter. Also, I cut the recipe in half and added a few extra berries. The link here has the recipe and full nutritional breakdown. 109 cals per muffin, 0.6 g fat.
Betcha can't eat just one - that's why I made just half of the recipe, lol, total of 10 muffins instead of 20.

Haven't tried it with the sugar-free ingredients, but first thought. I think it's Pillsbury that has sugar-free cakemix. make with egg whites only, skip the oil, bake according to directions in a rectangular cake pan. (I make my normal cakes this way). Cool for 15 minutes, then poke holes in the cake with a fork. make the jello - 1 cup boiling water mixed with sugar free jell-o, after well mixed pour over the cake - put in refrigerator for 3 hours. Then add light or sugar-free cool whip to the top, maybe even fruit. Not sure on calories or other nutrition, but that's one of my favorite cakes and it should be pretty low cal, if you use the sugar-free or light varieties of ingredients.
