Corn and Spinach enchiladas

I got this recipe from a taste of home cookbook and altered it a tid bit...

2 small bags of frozen corn... i buy 1 bag white and 1 yellow
1 small bag frozen chopped spinach
2 eggs or 1/4 cup egg substitute
15 oz part skim or low fat ricotta
parmesan cheese
mozz cheese (part skim)
1 small can tomato sauce
low carb tortillas... i used about 10-12 with filling left over
garlic salt for seasoning as you wish.

dethaw and mix spinach, corn, egg, ricotta, some mozz (reserve some), parmesan, and garlic salt together. Stuff the tortillas and lay face down in a greased 9x11 baking dish. pour sauce on top ( i like less sauce) and add some more mozz cheese and parm to the top as you wish. bake at 375 uncovered for 35-40 min or until brown. I enjoy it with salsa, tabasco, and low fat sour cream. yum!

    thanks for sharing this, I could see how you could easily modify it to your tastes, like Id totally add some enchilada sauce instead of tomato and do mexican cheese too. yummmm.
