I've been sustituting ground chicken in things lately, or cutting the ground beef I use with 1/2 ground chicken.
None of the kids seems to have noticed so far & hubby doesnt seem to mind. I was wondering if it makes a decent burger, or does it get too dry (like ground turkey-BLECH)
Any suggestions to keep th eburget moist? BTW I'm allergic to eggs so adding them to the meat isnt an option.
I use regular ground chicken NOT all white meat.

It okay.
I prefer turkey burgers over the chicken tho.
The chicken does seem to dry out a bit much on its own.
But its fine in pastas and dishes where it's cooked with liquid.0 -
It's a nature of the product, low fat items are going to dry out. Venison made into sausage is going to be very dry until / unless you cut it with some fat from another animal, we combined pork fat with venison for our last round of sausages.
Kind of defeats the purpose though to add fat to your lean meat though I suppose if you add healthier options....0 -
i had ground turkey one time , it was mixed with salsa and hot peppers, and cheese , we were dippin Nachos in it, i new right away it wasnt beef, wasnt to bad, but if i had the choice would be ...beef ..0

boyfriend's dad grilled us (me and the boyfriend) turkey burgers, an they weren't dry. they were very moist and a little sweet actually... but *shrug* that man can grill a breast and it come out as juicy as the oven... so...0

I've made chicken burgers as well and they stay really moist. What I do is cut a sweet onion into very small pieces and the moisture from the onion keeps it moist and adds a bit of flavor as well. Enjo!0

I've used ground chicken in the past to make burgers and I always found it a bit sticky even without the egg. I add a fit of flour to the mix, season it up, and throw it on the foreman or the grill (depending on the season). Besides the stickiness, I always thought they were pretty moist and tasted really good.0

I make burgers with it but i do add one egg (you can just use egg white), Some italian dressing, grated zucchini and some bread crumbs (i've learned they are needed for binding it all together). tastes great and still lean but if your beef burgers are lean, tasty and just beef then you may be ahead just using that instead of all the added stuff.
I browned my patties and finished them in the oven since the will be more delicate.0 -
I make turkey burgers every week for my family and they love them... try this recipe...
1.5 pounds ground turkey
2 tablespoons of Soy Sauce
1 tablespoon Worcester Sauce
Diced Onion
2 tablespoons Honey Mustard
Salt and Pepper to taste
Grill them up with some cheese on top... not dry at all! YUMMY!!0 -

Since you are using light and dark meat in your ground chicken, it should be moist enough on it's ow or mixed with lean hamburger.0

thanks everyone. made meatloaf with half beef half chicken really cut down on the calories & no one knew the difference0
