I would drain the beans and corn. Rinse the beans also. Dont drain the rotel, that would add a ton of flavor.
  • I'd drain the corn. Other than that, throw everything in a pot and let it simmer for a few minutes to marry the flavors. Add the chicken when it gets out of the oven and you are done! You may not need the entire packet of taco seasoning depending on how much chicken and how many beans....don't want overload! Bon Appetite!

    Here's an idea: http://allrecipes.co.uk/recipe/1653/homemade-chicken-soup.aspx

Have you got a food processor??

If I had those ingredients, I'd add the beans, chicken, drained corn, chopped onion into a food processor and whizz until a mashy paste. Slowly add chicken broth to get a consitency you want (I like thick soup so wouldn't do too much).. I'd also add a couple of carrots as well.. Season to taste - put I'd use a bit of pepper, garlic salt and thyme & parsley.. Personally I wouldn't use the taco seasoning.. But probably not too bad an idea to give it a go versus the pepper, garlic, thyme & parsley..

I avoided the Rotel, as I didn't know what it was until Googling, but now I know - I probably wouldn't use them in this soup..

Hope that helps.. Just a small idea..
