anyone else here have celiacs or a non-celiac gluten intolerance and need to eat gluten free?
what are some of the things you pack for snacks, make for quick and easy meals, and substitute to make eating feel more normal?
i hate buying the gluten free bread products; they're expensive and i just don't miss them that much! i'm looking into rice wraps, etc for sandwiches. any other ideas?

Maseca corn flour to make your own corn tortillas!!
Arepas can be made with the same corn flour... and they are awesome!

I'm celiac! I like to snack on fruit, protein bars (like think thin bars), string cheese, yogurt, etc.0

I don't know much about a gluten free diet. I watching a program on tv and they were discussing on his show that you have to watch gluten free products that are already prepared for people in the stores because they have extra calories...I believe that it would be best to come up with your own recipes...just a thought...0

I am and ave been living as such for over 2 years now, it's pain in the *kitten* at the start, but it gets fun if you like to experiment. My experience with the rice wraps are bad, they crack too esily, although i did hear if you steam them first they're more like the gluten ones. Just like you i think their excessivly expensive and don't miss gluten products enough to spend that much, but i've become a lettuce/cabbage wrap addict!! hahaha PF CHangs actually oes it with iceberg, but i prefer the burrito size/style that romaine offers, also the same goes for the mapa or savory cabbage i use. Also soups ae your best friend for quick on the go meals! haha an with the summer coming could soups like asparagus and avacado or a heart gazpacho would prob hit the spot! :-D friend me i'd love to help as much as i can :-D0 -
Snacks: string cheese, fruit, veggies and hummus, nuts, Lara bars, apple w/ peanut butter or almond butter, roasted chickpeas
Breakfast is almost always Greek yogurt with berries and nuts.
Lunch and dinner: eggs, quinoa, fish, brown rice pasta, lentil/bean soups, beans, beans, beans0 -
For snacks- sugar snap peas, hummus, cheese, fruits, yogurt, cut veggies, nuts, peanut butter on rice cakes. I'm one of those weird people that likes rice cakes. :-) I like the Crunchmaster crackers and my wife (hootsmamma) likes the Blue Diamond rice and nut crackers. Sliced squash makes great chips for dipping into hummus or putting cheese on. We are going on four months now and at first it was hard, but now it's kind of fun to find new things and try new things. I'm gluten intolerant and my wife has MS so is not supposed to eat gluten. Lots of really nice folks on this site are as well and tons of recipies to be found here also.
