61 Calorie No Sugar Added Brownie (Makes 8 servings)
Ingredients:
- 1/2 cup whole wheat pastry flour (or all purpose flour)
- 1/4 tsp baking powder
- 1 1/2 Tbsp Unsweetened Cocoa Powder
- 1 Ripe banana, mashed
- 1/4 cup + 1 Tbsp apple juice concentrate (or 5 Tablespoons)
- 1 Tbsp egg beaters
Directions:
1. Preheat oven to 350 degrees.
2. Combine mashed banana, apple juice concentrate and egg beaters in a small bowl. Stir well.
3. Combine the flour, baking powder and cocoa powder in a separate bowl and combine.
4. Pour the liquid ingredients into the dry ingredients all at once. Mix together thoroughly.
5. Pour into a sprayed metal pie pan or small baking dish (8 or 9 inches in diameter).
6. Bake for 15 minutes or until cooked through (It will still be slightly soft when done, but will set more when cooled).
7. Cut into 8 equal pieces and enjoy.

1. Apple juice concentrate is a boiled down form of apple juice that is much sweeter and a great natural substitute for sugar iin baked goods. It can be found in the freezer section next to frozen fruits. You could probably also use honey or agave nectar, but I don't know how that would turn out.
2. If you were to use an egg white, I would double or triple the rest of the recipe as an egg white is equal to 2 or 3 tbsp egg beaters.0 -
