B and J's Crabcake casserole
Figured if I'm gonna put it in the database you'all might as well get the recipe!!!
This is my take off on Maryland crabcakes...fewer cals less fat etc. Has Jamerz' seal of approval. I'm freezing half of it so one of us...(.Jamerz..:noway: ) won't be tempted with the midnight munchies. Plus I can drag it out when I don't feel like cooking!
The nutritional info is approximate....what I do is enter each item into the food diary and look at it as if it is a meal, then divide by the number of servings and enter that info in for the database. Figure that's good 'nuff. If anyone finds any errors please feel free to edit or let me know!
1 1/2 Krab (imitation crab meat)
1 c chopped onion
1c chopped zucchini
1/3 cup bread crumbs-dry
1/3 cup mayonnaise
1tablespoon fresh parsley-chopped
2 eggs
black or white pepper to taste
2 1/2 tsp Old Bay's seasoning
Mix all the wet stuff together, then throw in the Krab and crumbs, mix gently.
Spray a 9x9 square pan with PAM, pour mix in, pat gently to level.
2Tablespoons real butter
3/4 c dry bread crumbs
Melt butter, mix in bread crumbs sprinkle over crab mix. Bake at 350 till done (try 30 min, I cheated and used the microwave for 4 minutes, then finished in the oven for 15)
Let sit for 10 min then cut in 9ths and serve.

Hey! I resemble that remark! :ohwell: But yes, you gotta try this dish out! It decidedly gets the Y Chromosome seal of approval; :drinker: in other words it both very delish, and filling! The real bonus is that it's easy on the calories, and such as well.
Oh, btw, did I mention that I am the abso luckiest guy in the world to be married to such a smart, sexy, beautiful wiff?! (J of B and J's stuff... still a long, but very fun, story )0 -
