What have you been eating?

I know we all should put variety into our diets, but every year it seems that I get into some favorite thing to eat to help me slim down. Last year it was quinoa salads, this year it's tofu vege stir fry.
Trader Joes Extra Firm Organic Tofu,dried and cut into cubes (fry this separately in a non-stick)
green onion and garlic
all kinds of greens, probably green beans and Chinese broccoli
and never more than 1.5 Tbs of olive oil for a large batch and no need to add more oil for the veges because what's left in the pan is good enough (so long as the flame is kept on high)
And it's the sauce that makes it
rice wine vinegar (this makes the bulk of the sauce but I like vinegar)
garlic chili sauce (it's like sriracha but better)
a little sesame oil and soy sauce
splenda for sweetness
and this wonderful sauce I found in my local Asian grocers called sat-te
I eat lots and lots of this mixture cause it's low in fat and carbs. I can fill up on it and not worry too much that I'm over-eating. This is my go to food when I need good yummy food, and I'm just too tired to be a creative gourmet cooking light.
Tofu for protein, dark greens for vitamins, and garlic for cure-all, and sauce yumminess for the soul.

Veggie chili or soups. Basically anything with beans that I can pack for lunch! I love tofu stir try too0

Thanks for the recipe it sounds wonderful!
I make a very simple but tasty and filling skillet meal. I saute garlic, onion and bell pepper in a skillet. I add ground turkey and brown rice (and sprinkle it with a little sea salt and pepper). It is delicious and filling. It is low in fat and carbs but you get plenty of protein. Try it and let me know what you think!0 -
I love stirfry but I use different meats to change it up. Maybe I should try tofu.
I love greek salads. Hubby makes his own gyro meat and tzatziki is such a low cal dressing
Also: homemade salsa, greek yogurt, clemintines and celery root soup.0 -
That does sound yummy, I am veggie, so am always happy to find yummy recipes like this.
