Strawberry Margarita Pie ~ with tequila

Graham Cracker Shell (bottom)
2 envelopes unflavored gelatin
1/2 cup water
3 cups strawberries
1/3 cup sugar
1/4 cup tequila :drinker: and a shot for yourself :drinker: (LOL) :laugh:
1 tbsp orange flavored liqueur
1/2 package (2.8 oz size) whipped topping mix (1 envelope)

Prepare Graham cracker shell. Sprinkle gelatin on water in 2-qt saucepan. Let stand 1 min. to soften. Place strawberries, sugar, tequila, and liqueur in blender or food processor. Cover and blend on medium speed until smooth. Stir 1 cp strawberry mixture into gelatin mixture in saucepan.

Heat over low heat 3-5 min. stirring constantly, until gelatin is dissolved. Stir in remaining strawberry mixture. Place pan in bowl of ice and water, or refrigerate 30 to 40 min. stirring occasionally., just intil mixture mounds slightly when dropped from spoon.

Prepare topping mix in large bowl as directed on package- except omit vanilla and substitute skim milk for the milk. Fold strawberry mix. into whipped topping. spoon into pie shell. Sprinkle with reserved crumb mixture from shell. Refrigerate about 2hrs or until set.

1 1/4 cups graham cracker crumbs
2 tbsp strawberry jelly
1 tbsp veg. oil

spray 9X1 & 1/4 in. pie plate with non stick cooking spray. Mix all ingredients. reserve 2 tbsp mix. for topping. press remaining firmly bottom and sides of pie plate.



8 servings

1 serving is 175 calories , 5g fat, 30g carbs, 1g fiber and 3g protien
