What's for Dinner Easter Eve?

I am doing homemade chili with either pasta underneath.. it has kidney beans, black beans, tomato puree, tomato sauce, chili powder, onions, green peppers.. might even add some fat free sour cream and cheddar cheese. Will probably have leftovers tomorrow as well.. it will just be me, my 2 kids, and hubby so i am not cooking a huge fattening Easter dinner. Might make some blueberry muffins though a treat hehe.. and will color eggs as well... what about everyone else?

    I've got some low fat bbq pulled chicken going in the crockpot, and we'll have it over bread with a salad and fruit. Tomorrow I'll make a little turkey ham with herb roasted potatoes and carrots. Thinking of making some Easter cupcakes with the kids tomorrow (using some of their candy as decorations?).

    We'll color eggs after dinner. :)

    Today we are having a roast beef sandwich with swiss and carmellized onions and sauteed mushrooms. Tomorrow morning as always on easter we will have cinnmon rolls. For dinner- ham, potatoes, stuffing, green bean casserole, rolls, corn, and a pie.

    Traditionally fatty easter lol. No easter baskets this year though ;)

    Not so much Easter dinner eve but Easter day. Shrimp casserole, ham, sweat potatoes, green bean casserole, deviled eggs, pickles, pickled beats, Good thing we are having family over for dinner.

    tonught we're having marinated pork chop. Took the recipe from Raichlan (BBQ king!!!) but replace the Bourbon with Apple juice.
    A few blue potatoes with that and salad.

    Road food!....it's a long trip home, and I'm not leaving until 4 today.... Road food will make the trip seem worthwhile? At least the carbs will soothe me, temporarily, and I can dance them off tomorrow!

    I am very excited about my Easter dinner... i have a ham, two quiche, green and yellow beans, zucchini cakes, corn bread, rolls, fresh applesauce, and strawberry shortcake for dessert (on angle food cake with diet whip cream...) Im very excited.. but i know my family will be less than thrilled with a lighter Easter dinner... i did hear rumors that my sister is bringing pasta and my father is bringing potatoes... ugh..

    Easter eve... chicken sausage, salad, green beans and zuchinni :) MMMMM yummy.

    Easter day??... dear lord I have no idea what all is in store. Our family has a huge BBQ and pot luck that pretty much lasts all day. Yikes.
